Blueness is a Japanese inspired foodconcept by Sergio Herman which opened in the summer of 2018. It is located in the rear part of the lobby of the Strandhotel and is a place where guests can relax and meet for an aperitif and tastefull dishes.
Blueness is about the Japanese taste palette, Zeeland produce and deep umami-flavours with a fresh accent. Except a selection of beautiful wines there is a choice of premium sake and cocktails, all with a Japanese touch.
Blueness made an entry in the GaultMillau magazine with 14,5 out of 20 points.
